Chickpea Blondies

If you have been looking for a healthy, easy dessert recipe, then this one's for you!

I am the kind of person who craves something sweet every night without fail, and these chickpea blondies are the perfect sweet treat to leave you feeling satisfied without the sugar hangover.

Chickpeas are an excellent source of fiber and protein, so this recipe would be great for someone trying to sneak in more veggies or protein! This recipe would work as a perfect breakfast for kiddos as well.

The best part is these blondies are packed full of gut-loving bacteria from Just Thrive Probiotic, which makes them a great way to start the day. I also love to serve this with a dollop of cool whip or ice cream.

You can really use any nut butter you prefer in this recipe, but I will say peanut butter tends to add the most flavor. If you are nut-free, this recipe could also be made with equal parts of tahini instead.

I am a big believer that eating healthy does not have to be boring or bland. Sometimes, all it takes is shifting a few ingredients in your favorite recipes to make them a bit more balanced and nutritious. As I write this, I have my second batch of the week in the oven, and I wish I could describe just how delicious they make my house smell. Chickpea Blondies

Prep time: 15 min
Cook time: 35 min
Total time: 50 min
Course: Dessert
Diet: Gluten-free, Dairy-free, Vegan, Paleo
Servings: 10

Ingredients:
Directions
  1. Preheat the oven to 350 F.
  2. Combine the garbanzo beans, peanut butter, maple syrup, vanilla, baking soda, and salt in a large food processor or blender.
  3. Blend until a thick dough forms.
  4. Fold in half of the chocolate chips and sprinkle in the contents of the Just Thrive Probiotic capsules.
  5. Transfer to a greased or lined baking dish.
  6. Top with additional chocolate chips.
  7. Bake for 35-40 minutes, allow to cool, and enjoy!
